Crimean Tatar cookies khurabie

Friends, today we want to tell you about khurabie cookies, which occupy a special place in Crimean Tatar culture.

Delicate butter cookies khurabye are one of the most favorite sweets of the Crimean Tatars.

So, khurabie is a shortbread cookie that is always available in the homes of Crimean Tatars. These sweets are an integral part of all feasts. For example, many khurabie are prepared for weddings, which is why they are sometimes called bride’s cookies. In ancient times, the making of wedding cookies had a ritualized nature. Close relatives and neighbors gathered at the bride’s house, kneaded the dough and baked khurabie, so that they could then treat this delicacy to the guests and relatives of the groom.

Crimean Tatars bake these cookies in the shape of an oval, crescent, star or flower. Its specialty is, of course, melted butter, which adds tenderness and a nutty flavor.

So what is the perfect khurabie recipe?

In fact, the ingredients are very simple and every housewife has them:

ghee – 1 cup;

powdered sugar – 1 cup;

flour – 2 cups;

yolk – 1 pc.

Preparation:

Grind ghee at room temperature with your hands with powdered sugar until light foam.

Add the yolk, flour and knead the dough.

Place the finished dough on the board and shape the cookies so that their thickness is at least 1 centimeter.

Place the cookies on a baking sheet sprinkled with flour and bake at 200-250 degrees for 20-25 minutes.

Sprinkle the finished cookies, which have already cooled, with powdered sugar.
